Special Wynad Pepper 75g – White Peppercorn
Grown on an estate in Kerala, on the Wynad plateau, the area which has traditionally produced the very finest quality pepper. it is the fruit of the perennial vine Piper Nigrum which flowers between May – June and is harvested from January to March.
Virtually all commercial pepper is picked while the fruits are still green on the vine, and then dried in the sun, during which it turns black (white pepper is the same berry with the outer black skin removed)
Whereas,Parameswaran’s Special Wynad Pepper is picked entirely on his own plantation and only harvested when the fruit starts to ripen and turns a reddish colour
The ripe white peppercorns are selectively picked and prepared by soaking the ripe berries in running water for 10-15 days , then removing the outer skin completely. It is enjoyed for its sharper, though less subtle, than black pepper and for use in dishes where black specks would spoil the appearance.
The harvested pepper is taken off the punch by hand, washed, and dried in sun to the correct moisture level thus retaining the quality over a very long period. It is then graded and vacuum packed in polythene bags available in either 75 grams or 200 grams and presented in hand made cotton bags with a silk screen printed label on hand made paper.
